We Made a New Fruit Recipe & Celebrated July 4th!

Blueberry Streusel CobblerCelebrating the 4th of July many of us think about trying something new! At the Franklin Victorian Bed & Breakfast I did just that today for our guests for breakfast. It was Easy to Bake and Easy to Make.  We hope you make it to and celebrate with a new recipe and a wonderful Comfort Food.

Blueberry Streusel Cobbler
Ingredients:
1 pint fresh blueberries
1 (14-ounce) can Sweetened Condensed Milk (NOT evaporated milk)
2 teaspoons grated lemon peel
3/4 cup plus 2 Tablespoons cold butter
2 cups, biscuit baking mix, divided
1/2 cup firmly packed brown sugar
1/2 cup chopped nuts, (I used pecans)
Vanilla Ice Cream or Whip Cream
Blueberry Sauce (recipe follows)

1. Preheat oven to 325 degrees. In bowl, combine blueberries, Sweetened Condensed Milk and lemon peel.
2. In large bowl, cut 3/4 cup butter into 1 1/2 cups biscuit mix until crumbly; add blueberry mixture. Spread in greased 9-inch square baking pan.
3. In small bowl, combine remaining 1/2 cup biscuit mix and sugar; cut in remaining 2 tablespoons butter until crumbly. Add nuts. Sprinkle over cobbler.
4. Bake 1 hour and 10 minutes or until golden. Serve warm with ice cream or whip cream. Add Blueberry Sauce. Refrigerate leftovers if you have any….

Blueberry Sauce: In saucepan, combine 1/2 cup white sugar, 1 tablespoons cornstarch, 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground nutmeg. Gradually add 1/2 cup water. Cook and stir untill thickened. Stir in 1 pint blueberries; cook and stir until hot.

Makes 6-8 servings

The Wisconsin Bed and Breakfast Association Innkeepers are gathering recipes for the 8th addition of the Wisconsin Bed and Breakfast Association Cookbook.

The cook book will be soft cover and a lay flat binding. There will be information about each B&B that submitted a recipe and are asking each innkeeper to provide 4 recipes from each inn. There will be “Signature Inn” Recipes along with Bread & Muffins, Coffee Cakes & Pastries, French Toast & Pancake, Egg entrees, Lunch & Dinner Entrees, Fruits, Desserts, Appetizers, Soups, Salad & Sides, And Special Diets.
Cook books will be ready for sale by October at a price of $22.95. We would be happy to ship them to you or someone else for an extra shipping fee. You can pre-order now with us also.

Sparta Wisconsin Bed and Breakfast, Franklin Victorian B&B Recipe

When it is Winter leading into Spring and the days are starting to get lighter longer and we think we have almost made it, what do you like to do?
Here at the Franklin Victorian Bed and Breakfast we like to see what new recipes we can find, bake and serve.  I will share a yummy one with you that everyone will like.

BIG OATMEAL RAISIN CHEWS
These big, soft, chewy cookies are just delicious.

Ingredients
2 1/4 cups old-fashioned oats (do not use instant or quick oats)
1 1/2 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground allspice
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temp.
1 cup sugar
1 cup (packed) dark brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/4 cups raisins

Directions
Preheat oven to 350 degrees F. Have cookies sheets prepared.

Mix first 6 ingredients in medium bowl.  Using electric mixer, beat butter and both sugars in large bowl until well blended, about 1 minute.  Add eggs and vanilla; beat until well blended, about 1 minute.  On low speed, beat in dry ingredients just until blended (do not over beat). Stir in raisins.

Drop batter by 1/4 cupfuls onto prepared sheets, spacing evenly apart and forming 6 mounds per sheet.  Bake until cookies are pale golden brown, about 15 minutes.  Cool cookies on sheets for 5 minutes.  Using metal spatula, transfer cookies to rack and cool completely.

Serve, Eat and Enjoy
Hint: serve with vanilla ice cream

Recipe of the Weekend – PEACHES AND CREAM CAKE

Served warm or cool, this cake sure is one comforting treat! Made and guests want the recipe. Easy to make…

INGREDIENTS
2/3 c all purpose flour
1 tsp baking powder
1/2 tsp salt
1 egg
1/2 c milk
3 Tbsp butter, melted
1 can(s) (15 oz) sliced peaches, reserve liquid

CREAM FILLING
8 oz cream cheese, room temperature
1/2 c sugar
3 tsp reserved peach juice

TOPPING
1 tsp sugar
1/2 tsp cinnamon

Directions

Dough: Mix flour, baking powder and salt. Add egg, milk and butter and beat for 2 minutes. Pour into a well-greased, 9 inch round pan. Drain peaches, reserving juice; arrange peaches over batter. Cream Filling: Cream together ingredients and spoon over peaches. Topping: Sprinkle sugar mixture on top and bake at 350 degrees for 35-40 minutes. I check with a toothpick to come out clean. (Oven Temps vary).

That’s right!  Here’s a delicious egg recipe from the Franklin Victorian Bed and Breakfast in Sparta, Wisconsin.  This is a great recipe that has guests asking for the recipe so we will share…. Salsa Egg Bake

Take a small ramekin dish and spray with non-stick spray. (Or you can use muffin tins)

Add shredded cheese to cover bottom

Add about 1 Tablespoon of Any Type of Salsa. We like to use salsa with ranch or pineapple salsa.

Break open one egg over salsa and break open yolk.

Top with move shredded cheese (Any flavors that melts well). You can top with fresh chive too!

Pour in 1 tsp. cream or milk.

Bake at 375 for 15 minutes or till lightly brown this is a very simple and flexible recipe, can be used for breakfast, lunch or dinner.

7 Ways to Healthier Breakfast

At the Franklin Victorian Bed and Breakfast in Sparta, Wisconsin we always are trying to provide our biking guests a healthy breakfast that will help them concur the Elroy-Sparta Bike Trail. Here are 7 ways to help you in fixing your healthier breakfast at home.

1. Substitute plain yogurt or pureed low-fat cottage cheese for half or more of the sour cream in a recipe.
2. If a recipe calls for cheese, choose Swiss cheese for the lowest sodium.
3. Add a little oatmeal to pancakes, muffins or quick breads. You may also need to add a little extra liquid.
4. Add Vegetables. Add shredded vegetable like carrots, zucchini or pumpkin to quick breads, muffins or cakes.
5. To cut down on salt. You can reduce salt by a quarter to a half of what is called for in a recipe. Increase other salt-free spices and seasoning to add flavor.
6. Substitute skim milk in recipes. If the recipe calls for water, use skim milk instead to add calcium.
7. Honey and real maple syrup are healthier options for sweetening that processed sugar.
