Crescent Roll Bacon Swiss Quiche

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 5 minutes

Yield: 6-8 pieces

Crescent Roll Bacon Swiss Quiche

This often-requested recipe is a staple at the Inn, and a favorite of our guests.

Ingredients

  • 8 oz. can refrigerated seamless crescent rolls (if not your can use regular)
  • 6-8 slices of thick or thin sliced swiss cheese
  • 4 eggs, slightly beaten
  • 3/4 cup milk
  • 1 tbsp. minced or dried onion
  • 6 slices bacon, real bacon crumbles
  • 1 tbsp. parsley (we use fresh cut up when in season)
  • salt & pepper to taste

Instructions

  1. Unroll 8 oz. Pillsbury Seamless crescent rolls/sheets dough into a lightly greased 13" x 9" pan.
  2. Microwave the bacon and set aside to cool or use cooked bacon crumbles.
  3. Place enough cheese slices to cover dough.
  4. In a small bowl, combine the eggs, milk, and onion, then pour over the cheese slices.
  5. Crumble and sprinkle the bacon on top of the egg mixture then add the parsley.
  6. Cover with non-stick aluminum foil and bake at 350 degrees for 45 minutes.
  7. Watch so bottom does not get to brown.

Blueberry-Pecan French Toast

Cook Time: 1 hour

Blueberry-Pecan French Toast

Guests asked for the recipe so I delivered. Enjoy!

Ingredients

  • 8 cup regular French bread in 1 inch cubes with crust.
  • 5 eggs
  • 1 cup sugar
  • 1 tsp. Nutmeg
  • 3 cups milk OR half & half OR Soy milk
  • 2 cups fresh or frozen blueberries
  • 1 cup pecans, chopped
  • 1/4 cup butter
  • 1/2 cup brown sugar

Instructions

  1. Put bread in large bowl.
  2. Whip eggs, sugar & nutmeg until light in color and thick.
  3. Add milk, stir and pour over bread.
  4. Cover and put in refrigerator overnight.
  5. In morning, mix 1 cup blueberries into bread and put in greased 9X13 glass pan.
  6. Sprinkle balance of blueberries on top, then pecans.
  7. In a pan melt butter and brown sugar until bubbly.
  8. Pour mixture over blueberries and pecans.
  9. Bake at 325 degrees for one hour or until puffed.
  10. Let cool a little bit before cutting for serving.

Crantastic Quiche

Crantastic Quiche

Another dish that our guests love and want to try at home. Thanks to my good friend Anita Reeck for this recipe!

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 12 oz package mild Italian sausage (I use Jimmy Dean reduced fat premium orginal pork sausage in a tube).
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup dried cranberries
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup frozen broccoli pieces
  • 5 eggs, lightly beaten
  • 1-1/2 cups half and half
  • 1 cup Swiss cheese, shredded

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a medium skillet, brown the sausage, onion and garlic.
  3. Remove from heat, drain fat and add dried cranberries.
  4. Stir and set aside.
  5. Spray bottom of a 9- or 10-inch deep pie pan with non-stick cooking spray.
  6. Roll out 1 sheet of puff pastry to fit inside pan, pressing pastry dough up the sides of the pan.
  7. Sprinkle the shredded Monterey Jack cheese over puff pastry.
  8. Spread the sausage and dried cranberry misture on top of the cheese.
  9. Next sprinkle the broccoli on top of the sausage mixture.
  10. In a medium bowl, combine the eggs, half and half, salt and pepper; whisk to combine and then pur into the pie pan over all.
  11. Top with shredded swiss cheese.
  12. Bake for 45 minutes, or untill knife inserted near the center comes out clean.
  13. Let stand 10 minutes before cutting.

Crème Brulee French Toast

Cook Time: 40 minutes

Crème Brulee French Toast

So easy and has a wonderful favor. Another guest favorite.

Ingredients

  • 1/2 Cup butter (one stick)
  • 1/2 Cup Brown sugar
  • 2 Tblsp. Corn syrup
  • 1 loaf Hawaiian Sweet Bread
  • 5 large eggs
  • 1 1/2 cup half and half
  • 1 tsp. vanilla
  • 1 tsp. Grand Marnier
  • 1/4 tsp. salt

Instructions

  1. In a small saucepan, melt butter with brown sugar and corn syrup over moderate heat, stirring until smooth and bubbly.
  2. Pour into 13X9 baking dish sprayed with Pam. (Do not use non-stick dark metal pan)
  3. Cut 1 “ thick slices from bread and trim off crusts.
  4. Arrange slices in one layer into baking dish, squeezing to fit if necessary.
  5. In a bowl, whisk together eggs, half & half, vanilla, Grand Marnier and salt until combined.
  6. Pour carefully over bread.
  7. Cover and chill 8 hours or overnight.
  8. Bring to room temperature; bake uncovered 35 to 40 minutes @ 350’. (Check a few times so edges do not burn).
  9. After baking, invert baking dish over large plate or use a cookie sheet.
  10. Serve as is, no syrups needed.
  11. ENJOY!

Apple-Craisin French Toast

Cook Time: 45 minutes

Yield: 6-8 servings.

Apple-Craisin French Toast

One Word...Yum!

Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter
  • 2 tablespoons corn syrup
  • 2 baking apples, peeled and sliced (Granny Smith are good)
  • 1/2 cup craisins (dried cranberries)
  • 5 eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla
  • 1 loaf French bread, cut in 1” slices
  • 1/2 teaspoon cinnamon 1 medium mixing bowl
  • 9x13 baking pan (non-metal)

Instructions

  1. Cook the brown sugar, butter and syrup in a small pan on top of the stove until smooth.
  2. Pour into a sprayed 9x13-baking pan.
  3. Spread apples slices and craisins over the syrup.
  4. Place the bread on top of the apples and craisins.
  5. Beat together eggs, milk and vanilla.
  6. Pour over the bread.
  7. Dust top with cinnamon.
  8. Cover and refrigerate overnight.
  9. Bake uncovered for 45 minutes at 350.
  10. Cut in squares and serve on platter topped with apples, craisins and syrup from pan.

Easy Wild Rice Quiche

Cook Time: 40 minutes

Easy Wild Rice Quiche

The Frankin Victorian B&B Signature Dish that our guests love!

Ingredients

  • 1 cup cooked, wild rice
  • 6 beaten eggs
  • 1 can cream of mushroom soup
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 to 1/2 cups ham or bacon bits or sausage (I used the package of recipe style real bacon bits). I have used ham before too. Or you can make without any meat.
  • 1/4 c. chopped onion- (finely)
  • salt and pepper and any seasoning if you wish.

Instructions

  1. With mixer beat eggs, then add soup, cheese, rice, meat and minced onion.
  2. Add salt and pepper. Mix will with mixer.
  3. Pour into quiche dish or 9-10 in pie plate sprayed with PAM.
  4. Bake at 375' for 35-40 minutes or until a knife inserted in center comes out clean.
  5. Let stand a few minutes before serving.
  6. Can be prepared the night before and baked the next morning.

Baked Apple-Raisin Oatmeal

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Yield: 8 servings.

Baked Apple-Raisin Oatmeal

Fix it and forget it when you bake this delicious whole-grain oatmeal.

Ingredients

  • 2 cups chopped unpeeled apples or pears (2 medium)
  • 2 2/3 cups old-fashioned oats
  • 1/2 cup raisins
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 4 cups plain or vanilla soymilk
  • 1/4 cup real maple syrup
  • Additional soymilk, if desired
  • Chopped toasted walnuts, if desired

Instructions

  1. Heat oven to 350°F.
  2. Spray 2-quart casserole with cooking spray.
  3. In casserole, stir together apples, oats, raisins, cinnamon, salt, soymilk and syrup.
  4. Bake uncovered 45 to 50 minutes or until most of liquid is absorbed.
  5. Pour additional soymilk over each serving; sprinkle with walnuts.

Breakfast Pudding

Yield: 6-8 servings.

Breakfast Pudding

Good all year with any seasonal fruit!

Ingredients

  • 3 cups milk
  • 1/2 c cream of wheat
  • 1/3 cup sugar
  • 2 eggs
  • 2 teaspoons almond extract

Instructions

  1. Stir milk and cream of wheat with whisk over medium heat until thick.
  2. Add sugar and stir to dissolve.
  3. Add eggs and stir thoroughly.
  4. Add almond extract and remove from heat.
  5. Pour into 6-8 dessert dishes.
  6. Can top with fruit or preserves to serve.

Strawberry Soup

Strawberry Soup

Great way to use your fresh strawberries and frozen berries. This is a wonderful dish to offer your own guests.

Ingredients

  • 5 cups washed, cleaned & Hulled Strawberries (Or 1 bag of frozen strawberries)
  • 1/3 cup sugar
  • 1/2 tsp Almond Extract
  • 1 tsp. Strawberry Schnapps
  • 1 cup whipping cream
  • 1/2 cup 2% milk
  • 1/2 tsp. cinnamon

Instructions

  1. Put clean berries in blender.
  2. Add remaining ingredients.
  3. Whirl until mixture looks like buttermilk, then pulse a few times more to be sure all ingredients are WELL blended.
  4. Store in refrigerator overnight before serving.
  5. Garnish with fresh mint.

Blueberry Muffins

Cook Time: 30 minutes

Yield: 12 muffins.

Blueberry Muffins

Enjoy these wonderful, moist muffins. Great as a muffin top too.

Ingredients

  • 1/2 Cup butter or margarine (softened)
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 cup sour cream or plain yogurt
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups flour (all-purpose)
  • 2 cups blueberries, fresh or canned

Instructions

  1. Preheat oven to 375.
  2. Cream margarine and sugar together.
  3. Add eggs and beat until smooth.
  4. Mix in sour cream and vanilla.
  5. Combine dry ingredients and stir into creamed mixture. (Do not over mix; it will make the muffins tough).
  6. Fold in blueberries carefully.
  7. Using an ice cream scooper, scoop into muffin pan that has been sprayed with Pam.
  8. Bake to 25-30 minutes.
  9. Watched for doneness.
  10. Dust muffins with powder sugar when cool, or put butter on top when they are out of the oven.

Salsa Egg Bake

Cook Time: 15 minutes

Salsa Egg Bake

Make as many as you need of this wonderful morning dish!

Ingredients

  • Salsa
  • Shredded cheese
  • Cream or Milk
  • Eggs

Instructions

  1. Take a small ramekin dish and spray with non-stick spray. (Or you can use muffin tins)
  2. Add shredded cheese to cover bottom
  3. Add about 1 Tablespoon of Any Type of Salsa. We like to use salsa with ranch or pineapple salsa.
  4. Break open one egg over salsa and break open yolk.
  5. Top with move shredded cheese (Any flavors that melts well). You can top with fresh chive too!
  6. Pour in 1 tsp. cream or milk.
  7. Bake at 375 for 15 minutes or till lightly brown this is a very simple and flexible recipe, can be used for breakfast, lunch or dinner.

Wisconsin Baked Oatmeal

Wisconsin Baked Oatmeal

This is more like a pudding, and the ingredients are as surprising to our guests as the cooking method.

Ingredients

  • 2 cups old fashioned oats
  • 4 cups milk
  • 1/2 teaspoon almond flavoring
  • 1/4 cup light brown sugar
  • 1 large apple cored and unpeeled grated
  • 1/2 cup sliced almonds
  • 1/2 cup dried cranberries

Instructions

  1. Preheat oven to 375.
  2. Coat a 3 quart casserole or 8X8 inch baking pan with cooking spray.
  3. Combine all ingredients in the baking pan, mixing well.
  4. Top with additional almonds if desired.

Mandarin Orange Upside - Down Muffins

Cook Time: 30 minutes

Yield: 12 muffins.

Mandarin Orange Upside - Down Muffins

Easy upside-down muffins that will surprise your guests.

Ingredients

  • 1/4 c. butter or margarine, melted
  • 1/2 c. packed brown sugar
  • 1 can (15 oz.) mandarin orange segments
  • 12 maraschino cherries, drained without stems
  • 1 package (9 oz.) yellow cake mix
  • 1 egg

Instructions

  1. Preheat oven to 350 F.
  2. Place butter in Microwave on high 30 seconds or until melted.
  3. Lightly brush cups of muffin pan with butter; reserve remaining butter.
  4. In small bowl, combine rest of melted butter and brown sugar.
  5. Divide mixture evenly among muffins cups.
  6. Drain orange segments, reserving 1/2 c. juice.
  7. Place one cherry in bottom of each muffin cup; arrange 3-4 orange segments around each cherry. Use up all orange segments.
  8. In large bowl, combine cake mix, egg, and reserved juice; mix until smooth with beaters.
  9. Using a Medium scoop, divide batter evenly among muffin cups.
  10. Bake 25-30 minutes until golden brown and toothpick inserted in center comes out clean.
  11. Remove to nonstick cooling rack.
  12. Immediately loosen muffins from sides of muffin cups.
  13. Using oven mitts, carefully invert onto heat-safe platter or cookie sheet.

Blueberry Streusel Cobbler

Blueberry Streusel Cobbler

Ingredients

  • 1 pint fresh blueberries
  • 1 (14-ounce) can Sweetened Condensed Milk (NOT evaporated milk)
  • 2 teaspoons grated lemon peel
  • 3/4 cup plus 2 Tablespoons cold butter
  • 2 cups, biscuit baking mix, divided
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup chopped nuts, (I used pecans)
  • Vanilla Ice Cream or Whip Cream
  • Blueberry Sauce (recipe follows)

Instructions

  1. Preheat oven to 325 degrees. In bowl, combine blueberries, Sweetened Condensed Milk and lemon peel.
  2. In large bowl, cut 3/4 cup butter into 1 1/2 cups biscuit mix until crumbly; add blueberry mixture. Spread in greased 9-inch square baking pan.
  3. In small bowl, combine remaining 1/2 cup biscuit mix and sugar; cut in remaining 2 tablespoons butter until crumbly. Add nuts. Sprinkle over cobbler.
  4. Bake 1 hour and 10 minutes or until golden. Serve warm with ice cream or whip cream. Add Blueberry Sauce. Refrigerate leftovers if you have any....
  5. Blueberry Sauce: In saucepan, combine 1/2 cup white sugar, 1 tablespoons cornstarch, 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground nutmeg. Gradually add 1/2 cup water. Cook and stir untill thickened. Stir in 1 pint blueberries; cook and stir until hot.

Heavenly Fruit Sauce

Heavenly Fruit Sauce

Enjoy! Can be used with Fresh mixed fruits.

Ingredients

  • 8 oz. Regular Sour Cream
  • Zest of one Orange
  • 3/4 Cup White Sugar
  • 1/4 Cup Orange Juice (I use fresh squeezed from the orange)

Instructions

  1. Mix Ingeredients all together.
  2. Ideas: I make the night ahead so the flavors all come together. It keeps well in the refrig.
  3. Pour over fruit with granols, or over fruit with pound cake cut up.
  4. Scoop over banana or other fruits

Quick Apple Dumplings

Quick Apple Dumplings

Ingredients

  • 2 pkg. crescent rolls
  • 2 large apples cut into eight wedge pieces each
  • 1 cup sugar
  • 1 Tblsp. cinnamon
  • 1 stick of salted butter
  • 1 can of Mt. Dew (7.5oz can) new size

Instructions

  1. Roll each apple piece into each crescent roll- place single file in a 9x13 glass baking pan.
  2. Then In a small bowl, Crumble together the sugar, cinnamon and butter. Sprinkle mixture over apples and crescent rolls in glass pan. Pour one 7.5 oz can of Regular Mountain Dew over all the crescent rolls.
  3. Bake at 375 degrees for 35-40 minutes.
  4. Serve warm with vanilla ice cream.

Notes

This is a wonderfully, delicious recipe that is easier to make than you can imagine and it will bring more compliments than you ever thought possible. Guests will think you cooked for hours when you serve this one!
